Vegan Oatmeal Peanut Butter Chocolate Chip Cookies (aka the BEST cookies ever)


The title is a mouth full, but these cookies are seriously SO good! After trying dozens of recipes for vegan cookies and not liking ANY, a friend made these for us and we could not stop eating them!  This is the original recipe from Food.com, but we've made a couple of changes to it that we think make the cookies even better :)  These are so easy to make (you only need one bowl!) and when we tell people they're vegan, they don't believe us. So make these ASAP! They're the greatest.


Ingredients:

  • 1/3 cup peanut butter
  • 2 tablespoons veggie oil (if you don't like using this much oil, add a tablespoon of apple sauce instead of a 2nd tablespoon oil)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup soy milk (rice or almond works too! Whatever you prefer)
  • 1 teaspoon vanilla extract
  • 1 cup flour (we use all-purpose, but whole wheat would be healthier!)
  • 1/2 teaspoon baking soda (we’ve accidentally used baking powder before and it works great)
  • 1/2  teaspoon salt
  • 1 cup oats (we use ½ cup quick and ½ cup whole)
  • 1/2 cup vegan chocolate chips
  • *optional* 1/2 cup nuts (we don’t use them, but if you’re a nut lover, go for it!)

Directions:

Preheat oven to 400°F and grease your baking pan if it needs it, then set aside.

Start with the wet ingredients! 




Whisk together the peanut butter, oil, sugar, brown sugar, soy milk and vanilla until smooth. (We don't own a whisk, but a fork will do the trick)




Now time for the dry ingredients!




  Add baking soda and salt, then stir well.




 Add the flour, oats, and chocolate chips (and nuts if you're using them!). Just throw it all in there!
*Note about the oats: we use 1/2 rolled and 1/2 quick. We've used all rolled and found that the cookies were too chewy for our liking, and have used all quick and found that they were too dry. So half and half seems to do the trick! But, if you only have quick, just add a little extra peanut butter for some moisture! 




Now mix it all together really well. This cookie dough is supposed to be sticky and wet, so don't worry about adding extra flour!

Drop batter by spoonfuls onto prepared baking sheet. 




Bake for about 9 minutes, or until tops just begin to crack and bottoms are golden. Take the cookies out, but let them sit for about 10 minutes before trying to transfer them to a cooling rack or plate because they're pretty crumbly when they're hot. After 10 minutes, take 'em off and ENJOY! :)
